Can you believe we've been doing SDS for a whole month, crazy right?
I am SUPER excited because today my Italian 'Mama' and 'sisters' are coming to the UK :) I won't get to see the girls, but I am most certainly meeting up with Sabina (Mama). I haven't seen them since November, and I can't wait. 

Next week is busy for me. It's my Mum's birthday, and I am packing to move to Oxford. I'm working down there over the summer at an International summer camp. Blogging will take a back-seat, but don't worry SDS will still be here every week.

Thriving in your twenties

What is it about thriving in your twenties that just seems so damn hard? Most days it feels like you are wading through mud. 
So you've left Uni, well done, you graduated. Now you just have rent, unemployment, and a dwindling social circle to deal with. OK, so I know it's not life that for everyone, but most, including myself, that is the harsh reality.

Despite all this I have enjoyed my twenties, so I'm only half way through and looking forward to the next 4.5 years. My twenties so far have consisted of me living at home, being on an extremely tight budget, and only working for a total of around 2 years. They have also given me the opportunity to live and work in Italy, meet wonderful new people who are life-long friends, know what is feels to have loved and lost, and get too the route of myself.

Darling Magazine have a great article on exactly this topic; in fact it inspired this post.

Most days I feel like I'm wading through mud, but getting muddy has always been fun.

Sour Cream Coffee Cake

Today's the day. Interview time at 2:55pm. I've never been to such a thorough interview. I've had to prepare a 300 word essay, prepare answers to the questions I suspect they will ask me, and when I get there I have to do an English and Maths test.
Talk about jumping through hoops! I guess they have to do it though to find the right candidate. Fingers crossed it's me!
What is the worst interview experience you've ever had?

Editing the photo for this post just made me giggle. You always get photos of a half eaten cake. I can't seem to take a picture quick enough before my family has pounced on it and its all gone.
The idea for the cake came about after I made Bobby Dean's Mac and Cheese for dinner. I hardly use sour cream, and with nearly a tub left I thought what a better way to use it up then in cake?


Recently I've been asked; you live in the UK, why use cup measures?
I use cup measure because it's just easier. If you don't have proper cup measures my advice is to use a mug. Make sure you use the same mug for all the ingredients, that will ensure the ratio is still right and it will taste good. When baking just keep your eye on it as the timing might be a little off.

Sour Cream Coffee Cake

Ingredients:
For cake:1/2 cup butter, room temperature
1 cup sugar
2 eggs
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
12oz. sour cream
1 tsp. vanilla extract
1 tsp. coffee granules
For topping:
1 tsp. cinnamon
1/4 cup sugar
1/4 cup brown sugar

Method:Grease and line a 9"X13" baking pan, and until the oven to 350 degrees.
In a mixer, cream together the butter and sugar until light and fluffy. Add the eggs to the mixture, one at a time, beating well after each addition.
In a separate bowl, stir together the flour, baking soda, baking powder and salt.
Mix the coffee and vanilla into the sour cream.
Add the dry ingredients to the creamed mixture alternately with the sour cream mixture. Start and end with the dry ingredients. Mix until combined.
Pour half the batter into the pan, and sprinkle with half of the topping. Add the remainder of the batter on top, and sprinkle with the remaining topping. Bake for 30-35 minutes, until a toothpick inserted in the middle comes out clean.

A reflection: Waiting

"You can't always get what you want, but if you try sometimes, you'll find, you get what you need."

I knew I was going to write this post this morning, and when I woke up that song lyric was the first thing to pop into my head. How true is it!? I mean you can apply that thinking to pretty much every aspect in your life.

I've mentioned before that the whole idea from this post came out of slightly strange circumstances. 
A couple of weeks ago I volunteered at Peak Rail, which is a heritage railway near my home, and somewhere that Matt volunteers on weekends. It was Father's Day, which was unbelievably tough for me this year, and I was taking a break, sat on a bench in the glorious sunshine.
A few yards away were a family with the most beautiful, but biggest dog I have ever seen. They were sat eating lunch. The Mother was holding the dogs lead whilst at the same time eating a cheeseburger. I couldn't take my eyes off the dog. He sat down, and waited, and waited, and waited. He wanted a bite, but he didn't just snatch it out of her hand, he waited. 
Unfortunately, after all that waiting he didn't get a piece, but it got me thinking. God is like the lady with the cheeseburger. He knows that we are all waiting for something in our lives, but he only gives it us and makes it happen if he thinks it's the right thing.

The dog didn't get that cheeseburger because he wasn't supposed to. It would have been no good for his health.

Maybe I didn't get that job because if wouldn't have led me down the right path. Maybe what I'm waiting for is simply right round the corner.

Hope = a confident expectation of future blessing based on facts and promises.

The fact is he LOVES you sweet girl. He wants the BEST for you. He KNOWS you that well that he is GUIDING you in that direction. 

I know, sweet one, just how difficult it is to wait faithfully. I know what's like to have that cheeseburger dangled right in front of your face. I also know that when you do get to take a bite it will be oh so sweet.
