Veggie Barley Broth with Garlic Toasts

I read, and read, and read on Saturday, which was complete bliss. Did you link up with Speed Date Saturday? Sunday was taken up with volunteering in the cafe at Peak Rail. It was hard work! I could never be a waitress, and have such a better understanding and patience now. I slept for 10 hours last night!

Can you believe the last time I wrote a recipe post was nearly 2 months ago!?

Making up for it today though with this insanely good recipe. 
Cheap, healthy and I literally inhale it every time I make it. It is just THAT good.

Learnt from my Italian 'Mama', using local ingredients, and lots of love.

Veggie Barley Broth with Garlic Toasts
Serves 4

400g soup mix {I use this kind}
2 sticks of celery, small dice
1 carrot, small dice
1 onion, small dice
4 thick slices of crusty bread, cubed
Garlic powder
Parmesan, grated
Olive oil
Vegetable stock

Place the soup mix in a bowl and cover with water. Leave to soak for 24 hours. {You don't have to do this but I find it helps to reduce the scum that sometimes forms on the top}.
In a large heavy-based saucepan put a teaspoon of olive oil add the celery, carrot, and onion and cook until soft; around 7 minutes. 
Add the soup mix, along with enough vegetable stock to cover. {Mine usually takes 300ml}. Simmer for 40 minutes-1 hour, lid on, until the pulses are tender. With the back of a metal spoon remove some of the scum that may have formed on top. Turn off the heat and re-place the lid.
Put your oven on gas mark 6. Place the bread on a sheet pan. Sprinkle with garlic powder and parmesan. Adding a drizzle of olive oil just before putting in the oven. Cook for 10-15 minutes, or until toasted.

Use vegetarian cheese instead of parmesan and this is a wonderful meal the whole family can enjoy.

This looks good. I might have to try it. I have been worked in restaurants almost my whole life. Serving is hard, specially when the tips are bad and you work long hours.
