Mini Veggie Spring Rolls

Travelling home from the wedding today.  Needless to say it was beautiful, and so great to see so many old friends again.
I will of course be sharing pictures next week, not least because I dared to wear hot pink. I know, me in hot pink, it just doesn't make sense!

Before I get on with the recipe I just want to say that when I opened up to you this week the response I got was overwhelming. Thank You so much for your continued support even when things get a bit scatty. 

You'll see from the photos that I have to admit something. I cannot roll spring rolls for toffee (yes, that's yet another weird English expression Mia). I got so fustrated with these in the end that I just rolled them up and squeezed them in my hands. They turned out OK!
If you can fold spring rolls then go ahead, if not, follow the Helen patented method; roll and squeeze.


Mini Veggie Spring Rolls
Adapted From Weight Watchers

Makes - 20
ProPoints per serving (1 spring roll) - 1

Ingredients:
100g potato, raw, peeled and cut into a medium dice
Cooking spray
1 small carrot, raw, finely chopped
1 small onion, finely chopped
50g peas, cooked
1/2 tsp ground cumin
1/2 tsp dried coriander
1/4 tsp chilli powder
1/4 tsp turmeric
1 tsp garlic purée
1 tbsp fresh coriander, roughly chopped
Salt and pepper
5 sheets filo pastry

Method:
Cook the potato and carrot in boiling salted water until tender. Drain and partially mash them.
Mist a non-stick frying pan with cooking spray. Add the onion and cook until softened.
Stir the onion, peas, cumin, ground coriander  chilli powder, turmeric, garlic purée and fresh coriander into the potatoes and carrots. Season to taste. Cool completely.
Preheat the oven to Gas Mark 4.
Cut filo pastry sheets into strips. You need 4 strips out of each sheet.
Place a tablespoon of the mixture at one end of a pastry strip. Fold over and over to make a triangle, or just roll and squeeze. Repeat.
Mist with cooking spray, place onto baking sheets and bake for 25-30 minutes, until golden.

You could put anything in these. They are fantastic for using up leftovers.
