Orange and Cranberry Cupcakes

So technically these cupcakes are Christmas themed, but they are SO good.
I just couldn't wait another 354 days to share these with you. {What? There are only 354 days until Christmas? Yes siree!}

If you still have bits on dried fruit laying about your house use that, if not head out and buy some dried cranberries  Not the sweetened one's mind  - remember those resolutions.

I made these before I started my health kick, {come on, you can't deprive a girl of cake} so excuse the high calorie count.


Orange and Cranberry Cupcakes

Yields - 12
Calories per serving {1 cupcake} - 388 {I told you!}

Ingredients:
225g unsalted butter, softened.
225g caster sugar.
225g self-raising flour.
3 eggs.
130g low-fat vanilla yogurt.
70g dried cranberries.
Zest and juice of 1/2 an orange.
200g icing sugar

Method:
Pre-heat the oven to 190/Gas 5. Line a 12-hole muffin tin with paper cases. Place the butter, sugar, flour and eggs in a large mixing bowl. Beat for about 2 minutes until smooth, light and fluffy.
Fold in 100g of the vanilla yogurt, the dried cranberries, the orange zest and juice.
Divide the cake batter between the cake cases so they are half-filled. Bake in the oven for 12-15 minutes, until golden and springy to the touch. Transfer to a wire rack to cool.


To make the icing, mix together the icing sugar and remaining 30g of vanilla yogurt until smooth. The consistency should be runny {think of it as a glaze}. Decorate each cooled cake with a blob of icing and spread with a palette knife or allow to run over the edges of the case. Leave to set.
