Lightened-Up Fish Pie

I don't know about your family, but mine spends WAY too much on groceries. 

Over here it's cheaper to buy meat etc from the freezer section. I don't know what its like in your part of the world, but when there is a £4 difference in chicken breasts I know which ones I'm buying. OK so the quality probably isn't as good, but you buy what realistically you can afford.

I'll get to the point. 

Dad and I went to Iceland, which is a major frozen food chain over here. We got enough food to feed our family of four for 3 weeks and it only cost us £66, or the dollar equivalent - $105. Apart from fresh fruit, veggies, milk and bread we're sorted.

This is where the fish pie comes in.

Frozen fish pie mix. Why have I never discovered this before?! Can you get it where you are?

Its cheaper than fresh fish, but it still contains the nutrients.  Plus you get a nice variety of fish that would otherwise cost you a bit. 

We had a family meal for under £1 a head. Complete bargain! It was cheap in the calorie department too.

Lightened-Up Fish Pie

Serves - 4
Calories per serving - 353
Serving - 1/4 of the dish.

500g (1 pack) frozen fish pie mix. {Use fresh fish if you like. My mix had pollack, smoked haddock and salmon in it.}
Frozen veggies {any kind you like and as little or as much as you like}.
200ml fish stock
140g light cream cheese
1tsp cornflour, dissolved in 1/2tsp cold water.
1 whole head of cauliflower.

Steam the cauliflower until tender. When tender, blitz until smooth {I used my hand blender}. Add a little of the fish stock, salt and pepper to make it into a creamy mixture. Set aside.
Poach the fish slightly in a pan with the fish stock for 10 minutes. Remove the fish, but leave the stock. If required {I had to} break the fish into smaller pieces. Mix the veggies in with the fish.
Using the same pan you poached the fish in ad the stock you saved, cream cheese and corn flour. Stir continuously for 5 minutes until the sauce has thickened. Add the fish and veggies back into the sauce, stir and pour into a pie dish.

Take the cauliflower mash mixture and spread on top of the pie. It will spread, just like mashed potato.
{This is where I leave mine. I make it in the morning and then chill it in the fridge. It then goes in the oven for 30-40 minutes to heat through.}
Heat the oven to gas mark 6 and cook for 30 - 40 minutes. Serve piping hot.
