Filo Pasties

I kind of made these by accident one lunch time. I'm a firm believer that sometimes the best meals are the ones that you just throw together, no recipe needed.

Its about 2pm and the hunger is getting a little too much to bear now, so I open the fridge and nothing excites me. Another scan of the shelves and I see, chorizo, cheese and filo pastry. I can make something with that!

That Ladies and Gents is how filo pasties were born.

You can obviously fill them with anything, but in my world the more cheese the better.

Like everything I make they are super simple and don't take long to cook. You could even make them up and freeze them, cooking when needed. Take one to work with a salad for a cheap and delicious lunch. Really, they are so versatile.

Cheesy Chorizo Filo Pasties

Serves - 2

3 sheets of filo pastry
40g thinly sliced chorizo
4 tbsp cheddar cheese
Cooking spray

Pre-heat the oven to gas mark 5.
Take on sheet of filo and spray with cooking spray. Lay another sheet of filo on top, and repeat. Cut the pastry in quarters. You will have 4 rectangles of triple layered pastry.
Lay the chorizo over half of each pastry rectangle. Sprinkle over 1 tbsp of cheese per rectangle.
Spray the edges with cooking spray and fold over. Place on a baking sheet and cook for 10 minutes until brown and crispy.

Oh my goodness! I need to go out and buy some filo pastry! This really is a quick and easy lunch option. Love the fact that you can fill them with whatever suits your fancy.
