What is it about Autumn that just makes me what to incorporate apples into everything I bake?
I found this recipe whilst flicking through a magazine and knew I had to try it out.
I mean, who doesn't like yummy toasted nuts on a cake that is filled with apples?
Its super simple to make too.
I know I say it often, probably too much, but I love this season.
The air smells crisper, the leaves are turning beautiful colours, and there is such a sense of renewal in the air. Not to mention the amazing feeling when you've been for a walk in the cold and you come inside to a hot chocolate and a piece of this cake. Complete bliss!
Nutty Apple Traybake
Serves - 10
150g unsalted butter, softened
150g caster sugar
3 medium eggs
150g self-raising flour
50g ground almonds
150g chopped nuts (I used almond and pecans)
2 medium cooking apples, peeled, cored and thinly sliced
Heat the oven to gas mark 4. Grease and line a 26x18cm baking tin with baking paper.
Beat the butter, sugar, eggs, flour, almonds and cinnamon in a large bowl until smooth. Stir in half the nuts and the apple slices. Spoon into the prepared baking tin and level the surface. Scatter with remaining nuts.
Bake for 50 mins until risen and firm to the touch. Leave to cool in the tin. Cut into 10 squares and serve.
