The basics are; leave meat in slow cooker for 8 hours, stuff into bread, add cheese, melt in oven.

If you don't add any extra fat, and use low fat bread/cheese the calories aren't that crazy.
Your talking under 400 calories with low fat fries and ketchup. I don't think that's bad for a yummy non-diet looking dinner.
Italian Beef Sandwich
Adapted from the domestic impaired guide to retro kitchen arts.
2 chuck steaks
Dried Italian herbs
1 cup beef broth
4 hot dog buns
8 tbsp grated cheese
Place steak, herbs and broth into a slow cooker and cook on high for 3 hours. Switch to low for a further 5 hours.
After 8 hours the meat should just fall apart when you press it. Think the beef version of pulled pork.
Put the beef onto the hot dog buns, remember to add a little gravy, everyone loves gravy! Add 2 tbsp cheese per person and place in the oven until the cheese has melted.
Serve and wait for a quiet family, where the only thing you can hear are grunts of appreciation.
