Cheesy Bacon Fries

Did you all have a fabulous Monday?
I did intend to post this yesterday, but we went to visit my Grandfather in Bakewell. Its a little town in Derbyshire and it has a cute Monday market. We then decided to go out for dinner, treat time!
Now you know why this post didn't get written. So I'm changing things around; I can't deny you this yummyness!


These are insanely good!
They are totally a treat food though. I'm telling you now do not do having these everyday it will do your waist line no good. OK you've been warned!

Cheesy fries and burgers the ultimate Saturday night treat night.

Cheesy Bacon Fries
Adapted from Vittles and Bits

Serves 4
Ingredients:
2 large red potatoes, scrubbed well and evenly sliced (around 1/8 inch)
Cooking spray
A handful of grated cheese
Salt and Pepper
Bacon Lardons

OK so this is entirely customisable to your taste, hence no measurements. Just put as much or as little as you want on there.

Method:
Preheat oven to gas mark 5.
Fry off the bacon lardons, until they are just cooked. Boil the potatoes in boiling salted water until they are starting to go soft. Drain and pat dry.
Spray a sheet with cooking spray and layer the potatoes so they are overlapping. Spritz with cooking spray and sprinkle with salt and pepper. Sprinkle evenly with bacon and cheese.
Bake for 12-14 minutes in a preheated oven.
