I must admit I'm not very good with technology but here goes.
My name is Caroline, I'm 56 years old and a mother to 2 children and am known to be a bit batty, sometimes. I am a real 'mother hen' and love my family to bits. I enjoy reading, walking, soaking in the bath, going on holiday, baking for friends and just being me. In fact I'm going away tomorrow to Northumberland in celebration of my wedding anniversary 28 years ago!
I have been told that the recipe below is a firm favourite with all my friends and family and I thought I would share it with you all.
Apple and Blueberry Cake
225g self raising flour, sifted
165g caster sugar
125g unsalted butter, softened
2 medium eggs
1 eating apple, cored and thinly sliced
1 x 250ml cup fresh or frozen blueberries (about 150g)
2 heaped teaspoons demerara sugar
Preheat the oven to 160C fan/180C/gas mark 4.
Place the flour, sugar, butter, eggs and milk in a bowl and beat with an electric mixer until just combined.
Spoon the mixture into a greased 22cm spring-form tin lined with non-stick baking paper.
Top with the apple and blueberries and sprinkle with the demerara sugar.
Bake for 45 - 50 minutes or until the cake is cooked when tested with a skewer.
If desired, dust with icing sugar.
Serve with ice cream.
