Well that's coming to a stop now.
Whilst I'm currently running round my home town playing a game of human monopoly, don't ask! Follow up post on Saturday. I thought I'd share a non-baking recipe with you - shocker!
I other night I made this and it was scrummy. My family aren't known for their small portions and as it was cooking I thought as I was going to have to make another batch. Luckily it was just right. The portions were smaller than what we're used too, but to be honest that's probably a good thing!
It still filled us all up, tasted amazing and only cost 95p per serving.
Chicken and Chorizo Hash
Serves - 4
322 calories per serving.
500g new potatoes, halved
1 tbsp olive oil
100 chorizo sausage, sliced
2 red onions, quartered
1 garlic clove, finely chopped
3 boneless chicken thighs, chopped
1 tsp dried oregano
Zest and juice of 1 lemon
Salt and pepper
1. Boil the potatoes in a pan of lightly salted water for 10 mins, until cooked through. Drain and keep warm. Put the oil in a large heavy-based frying pan and fry the chorizo for 5 mins, until cooked through. Remove the chorizo from the pan and cook the onion and garlic in the remaining oil. Fry for 3-5 mins, until coloured. Add the chicken and fry for 10 mins, until cooked through.
2. Add the chorizo, potato halves, oregano, lemon zest and juice to the pan. Mix well and fry for 5 mins, stirring frequently until all the ingredients are piping hot. Season with salt and pepper and serve.
