Pineapple Cooler

We all had an amazing time at Mum's birthday yesterday. It was nice to take the time out. Things are a little hectic at the moment, as we go to Europe in 3 days!

I loved pineapple juice when I was little and thought it would be awesome to put into a cooler for birthday drinks.


The recipe is super simple, and you can adjust it to how you like it.

Pineapple Cooler

Makes - 1 litre

Ingredients:
3 cups pineapple juice.
1/4 cup sugar.
Diet lemonade.
Juice of 3 limes.
Sprig of fresh mint.

Method:
1. Mix the pineapple juice and sugar, until the sugar has dissolved.
2. Add the lime juice and top up to 1 litre with lemonade. Mix well.
3. Bruise the mint and place in the jug. Mixing well again.
4. Serve over ice.

I'm writing my first Friday Letters tomorrow. I'm trying to open up a little more on this blog. I feel like I'm doing/saying things that I think other bloggers say and do; know the feeling Julie!? I've never really written a heartfelt post. I don't know where I'd start.

Anyway I'm hoping writing a Friday Letter will help. Check back tomorrow to see if it does.
