Vanilla Buttercream Squares

I originally wasn't going to post these, but since posting on Facebook this morning that I was making these, I've had no end of requests for pictures and the recipe.
When something is in such high demand I just have to share it right?

I'm not going to lie to you, these take a while to make. What with all the cooking, cooling and prep, we're talking about 90 minutes. They are so worth it though.
The cake itself is moist and light. The buttercream is sweet, but it compliments the cake perfectly.

They make the perfect party tray-bake. You could even cover the top is the birthday boy or girl's favourite sweets, yum!

Vanilla Buttercream Squares

Makes: 16

For the sponge:
200g butter, softened and diced, plus extra for greasing
200g caster sugar
3 eggs
325g plain flour, sifted
3tsp baking powder
2tsp vanilla extract
150ml milk
For the buttercream:
150g butter, softened and diced
200g icing sugar, sifted
2tsp vanilla extract
2tbsp milk


  1. 1. Pre-heat the oven to gas mark 4. Line the base of a 20cm square cake tin with baking parchment and grease the sides with butter.
  2. Cream the butter, and gradually add the sugar and eggs. Fold in the remaining ingredients.
  3. Tip the mixture into the tin, smooth the top and bake in the oven for 40 minutes. Remove from the oven and leave to cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
  4. Meanwhile, make the buttercream. Cream the butter until soft, then beat in the remaining ingredients.
  5. Place the cake on a plate and spread the buttercream over the top using a palette knife. Cut into 16 squares.

I didn't have a big enough cake tin for this recipe. I baked it in one that was slightly smaller, meaning it took an hour to cook.
I also sliced the cake horizontally in half before I iced it. A quick tip for getting a straight cut; 
Make a groove all the way round the cake. Then place a length of string in the grooves and pull the opposite ends. 
You'll come out with a perfectly cut cake.
