Chicken Rollatini w/ Courgette and Mozzarella Stuffing {Recipe}

Isn't it SO annoying when you write a post and then realise you've stupidly deleted the photos that were supposed to go on it!? Apology's for the lack of photos on this post!

I've had this recipe for a while, and can't believe I've only just tried it! It is so yummy.
I've adapted it from Skinny Taste into UK weight watchers points, and with a slight change of ingredients.
It looks like a complicated recipe because of the stuffing element, but honestly it is so simple! It would make a great dinner party meal as you can make it ahead; bonus!

My only mistake with this recipe......whilst I was rolling the chicken I realised I had nothing to secure the stuffing with. No cocktail sticks, no kebab sticks, not even a toothpick. I spent ages racking my brain until I thought of a solution.....bacon! I kid you not, wrapping the chicken in bacon kept the stuffing inside and the chicken super moist.
Of course the bacon's optional if you are slightly more organised with your kitchen utensils than I am!

Chicken Rollatini with Courgette and Mozzarella Stuffing


Serves - 8
ProPoints - 8

Ingredients:
4 garlic cloves, chopped
1 medium courgette
50g Parmesan
90g light mozzarella
salt and pepper
8 chicken breasts
100g dried breadcrumbs
juice of 1 lemon
8 rashers of bacon
Cooking spray
1 tbsp olive oil

Method:

  1. 1.Season chicken with salt and pepper. Preheat the oven to gas mark 8. Lightly spray a baking sheet with cooking spray.
  2. 2.Saute the garlic on a medium-high heat for a minute. Add the courgette, most of the Parmesan, salt and pepper and cook for about 3-4 minutes. Set aside to cool. When cool, add the mozzarella and mix to combine.
  3. 3.Butterfly the chicken breasts {see video below} and spread 3 tbsp of the courgette-cheese mixture on each one. Loosely roll each one and keep seam side down. Here you either want to secure it, or wrap it in bacon!
  4. 4.Combine breadcrumbs and the remaining Parmesan in one bowl: in a second bowl combine olive oil, lemon juice and pepper.
  5. 5.Dip the chicken in the lemon-oil mixture, then in the breadcrumbs and place seam side down in a baking dish. Repeat with the remaining chicken. When finished, lightly spray with cooking spray.
  6. 6.Bake for 25-30 minutes. Serve immediately.
